Well, several things has changed in my life making it once again possible to indulge myself in the art of Smoke! Thanksgiving Barbecue

For me, Thanksgiving is a combination of traditional food fare and low and slow barbecue. Right now, I have a turkey slow roasting in the oven, as well as a boat load meat on my offset smoker. The picture above shows a 12 lb. Pork butt, an 11 lb. Brisker and 8 rolls of sausage (Fatties). Tomorrow is going to be a great day!

Brisket Experiment

Since being diagnosed with high blood pressure, I have had to be more concious of my sodium intake. This means that my dry rub recipes had to change dramatically. I have a couple of very good no-salt blends that work really well and the flavor of my bbq does not suffer. Tonight, I needed a quick rub for my brisket cook and I had some Southwestern Chipotle Mrs. Dash in supply. Well, I thought I would give it a shot and see how it turns out. This post has a picture of the rubbed brisket. I will post later with the results.

My Steak Heaven

There is nothing like a good old-fashioned steak dinner. I pulled a top sirloin out of the freezer to satisfy my craving for tasty protein. I put a decent coating of dry rub on the steak and let marinate in the fridge for about 2 hours. Then it was on to the grill for a searing for about 3 minutess per side. Next, I moved the steaks over from the direct heat, put a chunk of hickory on and let the steak smoke the rest of the way done to a nice medium well. Then I basted the steak with a teriyaki garlic butter mixture I whipped up. Lastly, I topped the steak with blue cheese crumbles and served it up with two of my favorite vegetables 1) A Corn/Greenbean mix and 2) …Bacon!
