I came across an old post of yours on a random smoking forum and followed the breadcrumbs back here. I live in Indianapolis and was wondering if you knew of a good place to pick up hickory in bulk (logs, split or unsplit, aged or green). I am getting ready to build a reverse flow offset firebox smoker out of a 60 gal air tank that was given to me and don’t look forward to feeding the thing with your standard store bought bags of chips or chunks. BTW really liked the article on bacon wrapped stuff. I’ve been grilling bacon wrapped chicken pretty regularly and love it, I do it very in a very similar method only I wrap the chicken up like you would see a bacon wrapped fillet of beef and hold it together with a toothpick, then season with garlic and herb and adobo and cook indirect until bacon crisps, I use standard kingsford bricks and usually toss 3-4 hickory chunks in to get a kinda hybrid grill/smoke. Damn getting hungry just talking about it. Anyway any leads on bulk hickory would be appreciated. Thanks, Chris
Unfortunately, I don’t know of any place in Indy. I have been able to get some very nice oak logs from a friend in exchange for some BBQ recipes but that’s about it. When it’s time for me to get some hickory or apple logs I will likely hit the Internet to see who has the best deal.

I’m new to competition BBQ. Are you participating in the BBQ competition next week in Franklin, Indiana? The Indianapolis Chapter of the NAACP had a BBQ competition scheduled for tomorrow but they cancelled due to a lack of participants. That was going to be my first competition. Now it looks like the one in Franklin is going to be my first try at competing.
Last month I joined the Kansas City Barbeque Society and took the Certified Barbeque Judge course. Please let me know if you plan on participating in the Franklin or New Palestine competitions.
